  • 2 lbs boneless skinless chicken breast or thighs Use thighs for a richer flavor.
  • 1 medium onion, thinly sliced Pre-sliced onions can save time.
  • ¼ cup chicken broth Can substitute with vegetable broth.
  • 1 medium lemon, juiced (about 3 tablespoons)
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 ½ teaspoons dried oregano
  • 1 ½ teaspoons dried thyme
  • 1 teaspoon fine sea salt Adjust to taste.
  • ½ teaspoon black pepper Add red pepper flakes for heat.

Instructions
 

Preparation

  • Place the boneless, skinless chicken in the bottom of your slow cooker, spreading it out evenly.
  • Add the thinly sliced onion on top of the chicken.
  • In a small bowl, whisk together the chicken broth, lemon juice, minced garlic, olive oil, oregano, thyme, sea salt, and black pepper.

Cooking

  • Pour the sauce evenly over the chicken and onions.
  • Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours until the chicken is fork-tender and internal temperature reaches 165°F.
  • Use two forks to shred the chicken in the slow cooker, mixing with the juices.

Serving

  • Serve warm, optionally garnished with fresh parsley or dill.

Notes

For best results, avoid overcrowding the slow cooker and taste the seasoning before cooking. Add chopped fresh herbs before serving for extra flavor.
