Ingredients
  

For the shrimp

  • 1 lb raw shrimp, large, peeled and deveined
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon Italian seasoning (thyme, basil, oregano, rosemary)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 5 cloves garlic, minced
  • 2 tablespoons olive oil

For the orzo and vegetables

  • 1/3 cup sun-dried tomatoes, chopped Substitute with fresh cherry tomatoes if unavailable.
  • 1 cup orzo, uncooked
  • 2 cups chicken stock Can substitute with vegetable broth or water.
  • 1/4 teaspoon salt
  • 14 oz artichoke hearts, drained and chopped (1 can or about 1 cup)
  • 4 oz fresh spinach Use fresh for the best flavor.
  • 1 cup heavy cream Can be substituted with half-and-half for a lighter option.

Preparation

  • Start by seasoning the shrimp. In a bowl, mix together the smoked paprika, Italian seasoning, salt, and black pepper. Sprinkle this mixture over the shrimp, ensuring each piece is evenly coated.

Cooking Shrimp

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is hot, add the seasoned shrimp and minced garlic. Cook for about 2 minutes on each side, or until the shrimp are pink and opaque. Remove the shrimp from the skillet and set them aside on a plate.

Cooking Orzo

  • In the same skillet, add the chopped sun-dried tomatoes and uncooked orzo. Sauté for 2 minutes, stirring frequently to coat the orzo in the oil.
  • Next, pour in the chicken stock and add 1/4 teaspoon of salt. Bring to a boil, then reduce to a simmer. Cook for about 5-10 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.

Adding Spinach and Artichokes

  • Stir in the fresh spinach and chopped artichoke hearts. Pour in the heavy cream, mixing until the spinach wilts down and everything is combined.

Combining and Serving

  • Return the cooked shrimp to the skillet and let everything simmer together for about 2 minutes to ensure the shrimp are warmed through.
  • Adjust seasoning with salt, pepper, and more smoked paprika if desired. Serve warm.

Notes

Ensure not to overcook the shrimp, stir the orzo frequently while it cooks, and use fresh spinach for the best flavor.
