Ingredients
  

For the dressing

  • 1/3 cup Greek yogurt
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons chopped fresh dill
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon honey Can be replaced with maple syrup.

For the salad

  • 2 English cucumbers, sliced thinly Fresh, firm cucumbers are best.
  • 1/4 cup very thinly sliced red onion

Preparation

  • In a large bowl, whisk together the Greek yogurt, extra-virgin olive oil, apple cider vinegar, chopped fresh dill, kosher salt, black pepper, and honey until well combined and creamy.
  • Add the thinly sliced English cucumbers and red onion to the bowl, and toss gently until coated in the dressing.
  • Serve immediately or chill in the refrigerator for about 30 minutes to enhance the flavors.

Notes

For added crunch, consider adding thinly sliced bell peppers or radishes. This salad is versatile and can be adjusted to your taste by using different herbs and vegetables.
