Instructions
Preheat oven to 360°F (180°C) and line a muffin pan.
Whisk egg, honey, Greek yogurt, vanilla, and olive oil until smooth.
Stir in flour, protein powder, baking powder, and baking soda until just combined.
Gently fold in blueberries.
Divide batter evenly into muffin cups.
Bake 15–20 minutes until a toothpick comes out clean.
Cool briefly before serving.
Notes
Use vanilla whey protein for best texture. Do not overmix the batter. Frozen blueberries can be used without thawing.
