  • 10 oz fresh blueberries
  • 1 cup plain flour
  • 1/2 cup vanilla protein powder
  • 3/4 cup thick Greek yogurt
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp honey
  • 1 large egg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 360°F (180°C) and line a muffin pan.
  • Whisk egg, honey, Greek yogurt, vanilla, and olive oil until smooth.
  • Stir in flour, protein powder, baking powder, and baking soda until just combined.
  • Gently fold in blueberries.
  • Divide batter evenly into muffin cups.
  • Bake 15–20 minutes until a toothpick comes out clean.
  • Cool briefly before serving.

Notes

Use vanilla whey protein for best texture. Do not overmix the batter. Frozen blueberries can be used without thawing.
